Serving up gourmet specialties and non-typical “college food,” Biola’s newest eatery is a food truck. The diner on wheels, Soaring Eagle, launched its full menu of global bites Tuesday, November 27 with a gathering of more than 100 students, staff and local news. Following a short ribbon cutting ceremony, samples of lumpia — a Filipino egg roll type dish — were served to the delight of those in attendance.
Lining up for eats such as a wild salmon burger on a brioche bun, pad thai with shrimp or bahn mi sandwich, students ordered from the global fusion menu offering Asian inspired cuisine and meals with a gourmet twist, such as the turkey burger stuffed with white cheddar.
Steve Rall, general manager of Bon Appetit, said the food truck craze that hit Los Angeles a few years ago is here to stay. “It’s not just a fad,” he told ABC 7 eyewitness news, who covered the event. Watch ABC 7’s news segment, “Biola lines up for gourmet food truck.”
Biola is one of the few universities to own and operate a food truck, providing an alternative choice and on-the-go meals for students alleviating wait times at other campus eateries.
The truck’s name and design were chosen through a student contest. Students Cameron Henry and Eva King came up with the winning name Soaring Eagle. Art student Courtney Coker was inspired by the Oregon Duck’s athletics logo for her winning truck design.
